Ingredients

2 cups leftover macaroni and cheese

1 cup crushed cheesy Cheetos

1 cup shredded mozzarella cheese

1/2 cup cream cheese, softened

1/4 cup milk

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

1 cup flour

2 large eggs

1 cup breadcrumbs (Panko preferred)

Oil for frying

Instructions

Prep the Mixture: In a large bowl, combine the leftover macaroni and cheese, cream cheese, shredded mozzarella, milk, garlic powder, onion powder, salt, and pepper. Mix until well combined, ensuring a creamy consistency.

Chill the Mixture: Cover the mixture and refrigerate for about 30 minutes to firm it up, making it easier to shape into bombs.

Shape into Balls: Once chilled, take a tablespoon of the mac 'n' cheese mixture and form it into a ball. Press a small amount of crushed Cheetos into the center to create a cheesy lava surprise. Make sure to seal it well so the cheese doesn’t leak out during frying. Repeat with the remaining mixture.

Set Up Breading Stations: Prepare three shallow bowls—one with flour, the second with beaten eggs, and the third with breadcrumbs. Dip each mac 'n' cheese bomb first into the flour, followed by the egg, and finally coat it evenly with breadcrumbs.

Heat the Oil: In a large skillet or deep fryer, heat oil to 350°F (175°C). Ensure there’s enough oil to submerge the bombs.

Fry the Bombs: Carefully place a couple of bombs in the hot oil, making sure not to overcrowd the pan. Fry for 3-4 minutes, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Serve: Serve the Cheetos Leftover Mac 'n' Cheese Lava Bombs hot, garnished with extra crushed Cheetos on top and a side of spicy dipping sauce or ranch for a crunchy, cheesy explosion in every bite!
