2 cups shredded cooked chicken

1 cup cream cheese, softened

1 cup sour cream

1 cup shredded Monterey Jack cheese

1 can (10 oz) cream of chicken soup

1 cup chicken broth

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

8 flour tortillas

Chopped cilantro for garnish

Sliced jalapeños for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Chicken Filling: In a mixing bowl, combine the shredded chicken, cream cheese, sour cream, and half of the Monterey Jack cheese. Add garlic powder, onion powder, and cumin. Mix until well combined.

Assemble the Enchiladas: Warm the tortillas slightly to make them pliable. Place a generous amount of the chicken filling in each tortilla, roll them up tightly, and place seam-side down in a greased baking dish.

Make the Sauce: In a separate bowl, whisk together the cream of chicken soup and chicken broth until smooth. Pour half of this sauce over the rolled enchiladas.

Top with Cheese: Pour the remaining sauce over the top of the enchiladas. Sprinkle the rest of the Monterey Jack cheese evenly over everything.

Bake: Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for another 15 minutes, or until the cheese is bubbly and slightly golden.

Garnish and Serve: Once out of the oven, let the dish cool slightly. Garnish with chopped cilantro and sliced jalapeños if desired.
