Cheesy White Chicken Enchiladas

Ingredients
  

2 cups cooked, shredded chicken

1 cup cream cheese, softened

1 cup sour cream

2 cups shredded Monterey Jack cheese

1 cup chicken broth

1 can (10 oz) green enchilada sauce

8 flour tortillas

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Chopped fresh cilantro for garnish (optional)

Sliced jalapeños for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a mixing bowl, combine the cooked shredded chicken, cream cheese, sour cream, garlic powder, onion powder, salt, and pepper. Mix until well combined.

      Spread half of the green enchilada sauce evenly on the bottom of a 9x13-inch baking dish.

        Take a flour tortilla, spoon about 1/4 cup of the chicken mixture onto the center, sprinkle with some shredded Monterey Jack cheese, and roll the tortilla tightly. Place seam-side down in the baking dish. Repeat with the remaining tortillas and chicken mixture.

          Pour the remaining enchilada sauce over the rolled tortillas. Then, pour the chicken broth evenly over the top.

            Sprinkle the rest of the shredded Monterey Jack cheese over everything.

              Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

                Remove from the oven and let cool slightly before garnishing with chopped cilantro and sliced jalapeños, if desired.

                  Serve warm and enjoy your cheesy, creamy white chicken enchiladas!
