Ingredients
  

8 oz. rotini or penne pasta

1 lb. ground beef or turkey

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning (about 1 oz.)

1 can (15 oz.) diced tomatoes with green chilies

1 can (15 oz.) black beans, drained and rinsed

1 cup corn (frozen or canned)

2 cups chicken or beef broth

1.5 cups shredded cheddar cheese

Salt and pepper, to taste

Fresh cilantro, for garnish (optional)

Sour cream, for serving (optional)

Instructions
 

In a large skillet over medium-high heat, brown the ground beef or turkey until fully cooked. Drain any excess fat.

    Add the diced onion and minced garlic to the skillet, cooking until softened, about 3-4 minutes.

      Sprinkle in the taco seasoning, stirring well to combine. Cook for an additional minute to allow the spices to bloom.

        Pour in the diced tomatoes with their juices, black beans, corn, and broth. Stir everything together.

          Bring the mixture to a boil, then add the pasta. Give it a good stir and reduce heat to a simmer. Cover and let cook for about 10-12 minutes, or until the pasta is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.

            Remove the skillet from heat and stir in the shredded cheddar cheese until melted and creamy. Season with salt and pepper to taste.

              Garnish with fresh cilantro if desired and serve hot with a dollop of sour cream on the side.
