Cheesy Stuffed Meatloaf Bites

Ingredients
  

1 pound ground beef (80/20)

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 large egg

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried Italian herbs (basil, oregano, thyme)

Salt and pepper to taste

1 cup shredded mozzarella cheese

1/2 cup diced bell peppers (red and yellow)

1/4 cup chopped fresh parsley (for garnish)

1 tablespoon ketchup (for drizzling)

Instructions
 

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, egg, garlic powder, onion powder, Italian herbs, salt, and pepper. Mix until well blended.

      Take a handful of the meat mixture (about the size of a golf ball) and flatten it in the palm of your hand.

        Place about 1 tablespoon of shredded mozzarella cheese and a few pieces of diced bell peppers in the center of the flattened meat. Fold the edges over the filling and shape it back into a ball. Repeat with the remaining mixture and filling.

          Arrange the meatloaf bites on the prepared baking sheet, ensuring they have space between them for even cooking.

            Drizzle a small amount of ketchup over each meatloaf bite for added flavor and moisture.

              Bake in the preheated oven for 25-30 minutes or until they are cooked through and the internal temperature reaches 160°F (70°C).

                Remove from the oven and let them cool for a couple of minutes. Then, transfer the meatloaf bites to a serving platter.

                  Garnish with chopped fresh parsley before serving.
