4 large russet potatoes, thinly sliced

2 cups cooked ham, diced

2 cups shredded sharp cheddar cheese

1 cup heavy cream

1 cup whole milk

1 medium onion, finely chopped

3 cloves garlic, minced

2 tablespoons butter

2 tablespoons all-purpose flour

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet, melt the butter over medium heat. Add the chopped onion and garlic, sautéing until soft and translucent, about 3-4 minutes.

      Sprinkle in the flour, stirring constantly for 1 minute. Gradually whisk in the heavy cream and milk, ensuring there are no lumps.

        Add thyme, paprika, and season with salt and pepper. Continue stirring until the mixture thickens slightly, about 3-5 minutes. Remove from heat.

          In a greased 9x13-inch baking dish, layer half of the sliced potatoes, followed by half of the diced ham. Pour half of the creamy sauce over the layers. Sprinkle half of the shredded cheddar cheese on top.

            Repeat the layers with the remaining potatoes, ham, and sauce, finishing with the last of the cheese on top.

              Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.

                Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is golden and bubbling.

                  Let the dish cool slightly before serving.
