2 cups all-purpose flour

1 tablespoon baking powder

½ teaspoon baking soda

1 teaspoon salt

½ teaspoon black pepper

½ cup unsalted butter, chilled and cubed

1 cup shredded sharp cheddar cheese

1 cup cooked sausage, crumbled (use your favorite type, spicy or mild)

¾ cup buttermilk (or regular milk with 1 tablespoon of vinegar added)

1 tablespoon fresh chives, chopped (optional for garnish)

Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and black pepper.

      Using a pastry cutter or your fingers, cut in the chilled butter until the mixture resembles coarse crumbs.

        Stir in the shredded cheddar cheese and crumbled sausage until evenly distributed.

          Make a well in the center of the dry ingredients and pour in the buttermilk. Stir gently until just combined, being careful not to overmix.

            Turn the mixture onto a lightly floured surface and pat it into a rectangle about 1 inch thick.

              Use a biscuit cutter (or a glass) to cut out biscuits and place them on the prepared baking sheet, leaving about an inch of space between each biscuit.

                Gather any scraps, reshape, and cut out additional biscuits until all the dough is used.

                  Optional: Brush the tops of the biscuits with a little extra buttermilk or melted butter for a golden finish.

                    Bake in the preheated oven for 15-18 minutes, or until the biscuits are golden brown on top.

                      Remove from the oven and let cool for a few minutes before serving.
