2 cloves garlic, minced

1 (10 oz) can Rotel diced tomatoes with green chilies

1 cup beef broth

8 oz pasta (elbow, penne, or your choice)

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

Fresh cilantro or parsley, chopped (for garnish)

Cook the Ground Beef: In a large skillet or pot over medium heat, add the ground beef. Cook until browned and no longer pink, breaking it apart with a spatula. Drain excess fat if necessary.
