1 lb ground beef

1 medium onion, chopped

3 cloves garlic, minced

1 (10 oz) can RoTel diced tomatoes with green chilies

1 cup beef broth

2 cups elbow macaroni

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon paprika

Salt and pepper to taste

2 cups shredded cheddar cheese

1/2 cup cream cheese, softened

Fresh cilantro or parsley, chopped (for garnish, optional)

Instructions
 

Cook the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula. Once cooked, drain any excess fat.

    Sauté the Aromatics: Add the chopped onion and minced garlic to the skillet with the beef. Sauté for about 3-4 minutes, until the onion becomes translucent.

      Combine Ingredients: Stir in the can of RoTel tomatoes (with juices), beef broth, elbow macaroni, chili powder, cumin, paprika, salt, and pepper. Mix everything together well.

        Cook the Pasta: Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 12-15 minutes, stirring occasionally, until the pasta is cooked and the liquid is mostly absorbed.

          Add Cheeses: Once the pasta is cooked, remove the skillet from heat. Stir in the shredded cheddar cheese and softened cream cheese until melted and creamy. If the mixture is too thick, you can add a splash more of beef broth or water to reach your desired consistency.
