1 cup shredded cheddar cheese (or cheese of your choice)

4 large eggs

1 small onion, finely chopped

1 bell pepper, diced (any color)

2 tablespoons butter or olive oil

Salt and pepper to taste

Fresh chives or parsley for garnish

Cook the Potatoes: In a large skillet, heat 1 tablespoon of butter or olive oil over medium heat. Add the diced potatoes and cook for about 10-12 minutes, stirring occasionally, until they are tender and golden brown. Season with salt and pepper.

    Sauté Vegetables: Add the chopped onion and bell pepper to the skillet with the potatoes. Sauté for another 5 minutes until the vegetables are softened and fragrant.
