2 cups leftover mashed potatoes (ensure they're creamy)

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

2 large eggs

1/4 cup milk (or buttermilk for extra tang)

1/4 cup finely chopped green onions

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/2 cup breadcrumbs (for topping)

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C) and grease a muffin tin with non-stick spray or butter.

    In a large mixing bowl, combine the leftover mashed potatoes, shredded cheddar cheese, and grated Parmesan cheese. Stir until the cheeses are well incorporated into the potatoes.

      Add the eggs to the mixture, followed by the milk, chopped green onions, garlic powder, onion powder, salt, and pepper. Mix everything until creamy and smooth. Taste and adjust salt and pepper if necessary.

        Spoon the potato mixture into the greased muffin tin, filling each cup about 3/4 full.

          In a small bowl, mix breadcrumbs with a little olive oil (just enough to make them slightly moist) and sprinkle a couple of teaspoons over the top of each muffin for a crispy topping.

            Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

              Once baked, remove the muffins from the oven and let them cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.

                Garnish with fresh parsley if desired before serving.
