Ingredients

1 loaf of crusty garlic bread, sliced

8 oz shrimp, peeled and deveined

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 tablespoons unsalted butter

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, finely chopped (for garnish)

Instructions

Prepare the Shrimp: In a skillet over medium heat, melt 1 tablespoon of butter. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the shrimp and season with Italian seasoning, salt, and pepper. Cook the shrimp for 2-3 minutes on each side until they turn pink and opaque. Remove from heat and set aside.

Assemble the Grilled Cheese: Lay out half of the garlic bread slices on a clean surface. On each slice, layer the cooked shrimp evenly. Sprinkle a generous amount of shredded mozzarella cheese over the shrimp, followed by some grated Parmesan cheese.

Top and Butter: Place the remaining garlic bread slices on top of the cheese to form sandwiches. Spread the remaining tablespoon of butter on the outer sides of each sandwich.

Grill the Sandwiches: In a skillet over medium heat, place the sandwiches buttered-side down. Grill for about 3-4 minutes until the bread is golden brown and crispy, then carefully flip and grill the other side until golden and the cheese has melted, another 3-4 minutes.

Serve: Remove the grilled cheese from the skillet and let it cool slightly. Cut the sandwiches in half diagonally. Garnish with fresh parsley.
