4 medium russet potatoes, diced

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

1 cup shredded cheddar cheese

½ cup sour cream

¼ cup green onions, sliced

½ cup corn (fresh or frozen)

½ cup black beans, rinsed and drained (optional)

Fresh cilantro for garnish

Instructions
 

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    In a large mixing bowl, combine the diced potatoes with olive oil, garlic powder, paprika, cumin, chili powder, salt, and pepper. Toss until the potatoes are well coated.

      Spread the seasoned potatoes evenly on the prepared baking sheet. Bake for 25-30 minutes or until they are golden brown and crispy, tossing halfway through for even cooking.

        Once the potatoes are done, remove them from the oven and sprinkle the shredded cheddar cheese over the top. Return to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.

          While the potatoes are baking, prepare the topping by mixing sour cream, green onions, corn, and optional black beans in a small bowl. Season with salt and pepper to taste.
