1 lb ground beef

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

4 large tortillas (flour or whole wheat)

1/2 cup salsa (for serving)

Fresh cilantro, chopped (for garnish)

Instructions
 

In a large skillet over medium heat, add the ground beef. Cook until browned and no longer pink, breaking it apart with a spoon, about 5-7 minutes. Drain any excess fat.

    Add garlic powder, onion powder, smoked paprika, salt, and pepper to the skillet. Stir well to combine and cook for an additional 2 minutes.

      Remove the skillet from heat and allow the beef to cool slightly. Stir in the softened cream cheese and half of the cheddar cheese until well blended.

        Lay a tortilla flat on a clean surface. Spoon a quarter of the beef mixture along one edge of the tortilla. Roll it up tightly from that edge to the opposite side, sealing in the filling.

          Repeat this process for the remaining tortillas and beef mixture.

            Preheat a nonstick skillet or griddle over medium heat. Place the roll-ups seam side down in the skillet and cook for 2-3 minutes on each side, until golden and crispy.

              Remove from heat and slice each roll-up into bite-sized pieces.

                Arrange the roll-ups on a serving platter, and sprinkle the remaining cheddar cheese on top while they are still warm.

                  Serve with salsa and garnish with fresh cilantro.
