2 large onions

1 cup all-purpose flour

1 cup breadcrumbs (preferably panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon cayenne pepper (optional for heat)

2 large eggs

1 cup buttermilk

1 cup shredded cheddar cheese

8 slices of crispy cooked bacon, chopped

Salt and pepper to taste

Oil for frying (vegetable or canola)

Fresh parsley for garnish (optional)

Instructions
 

Prepare the Onions: Peel the onions and slice them into 1-inch thick rings. Carefully separate the rings from each other and set them aside.

    Make the Coating: In a medium bowl, combine flour, garlic powder, paprika, cayenne pepper, salt, and pepper. In a separate bowl, whisk the eggs and mix in the buttermilk.

      Bread the Rings: Dip each onion ring first into the flour mixture, shaking off excess, then into the egg mixture, and back into the flour mixture again for a double coating. Make sure they’re well-coated for an extra crispy texture.

        Cheese and Bacon Filling: In a small bowl, mix the shredded cheddar cheese and chopped bacon together. Carefully fill the inner part of each onion ring with this cheesy bacon mixture.

          Fry the Rings: Heat oil in a deep frying pan over medium heat (about 350°F or 175°C). Once hot, carefully place the stuffed onion rings in the oil, a few at a time, cooking until golden brown and crisp, about 3-4 minutes per side. Avoid overcrowding the pan.

            Drain and Serve: Once golden, remove the onion rings and place them on a plate lined with paper towels to drain excess oil. Allow to cool slightly before serving.
