Ingredients

12 ounces cheese tortellini (fresh or frozen)

1 cup thinly sliced beef (such as ribeye or flank steak)

1 tablespoon olive oil

1 medium onion, thinly sliced

1 green bell pepper, thinly sliced

2 cloves garlic, minced

1 cup heavy cream

1 cup provolone cheese, shredded

1/2 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Tortellini: In a large pot of salted boiling water, cook the cheese tortellini according to package instructions until al dente. Drain and set aside.

Sauté the Beef: In a large skillet over medium-high heat, add the olive oil. Once hot, add the sliced beef, seasoning with a pinch of salt and pepper. Sear the beef for about 2-3 minutes until browned. Remove the beef from the skillet and set aside.

Sauté the Vegetables: In the same skillet, add the sliced onion and green bell pepper. Sauté for 4-5 minutes until tender. Add the minced garlic and cook for an additional minute until fragrant.

Make the Sauce: Lower the heat to medium, then pour in the heavy cream, stirring well to combine with the sautéed vegetables. Gradually add the shredded provolone cheese, stirring continuously until melted and the sauce becomes smooth and creamy.

Combine: Add the cooked beef back into the skillet with the creamy provolone sauce. Stir in the cooked tortellini and Italian seasoning, mixing until the tortellini is well coated in the sauce. Cook for an additional 2-3 minutes to heat through. Adjust seasoning with salt and pepper if needed.

Serve: Remove from heat and garnish with chopped fresh parsley before serving.
