1 cup unsalted butter, softened

3/4 cup granulated sugar

3/4 cup brown sugar, packed

2 large eggs

1 tsp vanilla extract

2 1/4 cups all-purpose flour

1 tsp baking soda

1/2 tsp salt

2 cups semi-sweet chocolate chips

8 oz cream cheese, softened

1/4 cup granulated sugar

1/2 tsp vanilla extract

1 egg yolk

Instructions
 

Prepare the Cheesecake Filling:

    - In a medium bowl, blend the softened cream cheese until smooth. Add 1/4 cup granulated sugar, 1/2 tsp vanilla extract, and the egg yolk. Mix until fully combined and creamy. Set aside in the refrigerator to firm up a bit while preparing the cookie dough.

      Make the Cookie Dough:

        - Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

          - In a large bowl, cream together the softened butter, 3/4 cup granulated sugar, and 3/4 cup brown sugar until light and fluffy.

            - Beat in the eggs one at a time, then stir in the vanilla extract.

              - In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.

                - Fold in the chocolate chips until evenly distributed.

                  Assemble the Cookies:

                    - Take a tablespoon of cookie dough and flatten it in your palm. Place about a teaspoon of the cheesecake filling in the center, then enclose the filling with the cookie dough and roll it into a ball.
