1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

1/3 cup granulated sugar

4 (8 oz) packages cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

4 large eggs

1 cup sour cream

1/4 cup all-purpose flour

1 cup fresh strawberries, diced

Instructions
 

Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan and line the bottom with parchment paper for easier removal.

    In a bowl, combine the graham cracker crumbs, melted butter, and 1/3 cup of sugar. Mix until it resembles wet sand.

      Press the crumb mixture firmly into the bottom of the prepared springform pan to create a solid crust.

        Bake the crust in the preheated oven for about 10 minutes, then remove and let it cool.

          In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Add 1 cup of sugar and the vanilla extract, mixing until well combined.

            Beat in one egg at a time, ensuring each is fully incorporated before adding the next.

              Add the sour cream and flour to the mixture, beating just until combined. Be careful not to overmix.

                Fold in the diced strawberries gently with a rubber spatula.

                  Pour the cheesecake batter over the cooled crust in the springform pan, smoothing the top with a spatula.

                    Bake in the oven for 55-60 minutes, or until the center is set but still slightly wobbly. Turn off the oven and crack the door, allowing the cheesecake to cool in the oven for 1 hour.

                      Once cooled, refrigerate the cheesecake for at least 4 hours or overnight for best results.

                        Before serving, top with extra fresh strawberries and cut into slices.
