2 cups cherry tomatoes, halved

3 tablespoons olive oil

4 cloves garlic, minced

8 oz (about 225g) pasta (penne or fusilli)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a baking dish, combine the halved cherry tomatoes, minced garlic, 2 tablespoons of olive oil, salt, pepper, and Italian seasoning. Toss well to ensure the tomatoes are evenly coated.

      Roast the tomatoes in the preheated oven for 20-25 minutes, or until they are soft and caramelized.

        While the tomatoes are roasting, cook the pasta according to the package instructions until al dente. Drain and set aside.

          In a large mixing bowl, combine the cooked pasta, ricotta cheese, shredded mozzarella, roasted tomatoes, and any juices from the baking dish. Mix well until everything is evenly incorporated.

            Transfer the pasta mixture into a greased 9x13 inch baking dish. Sprinkle grated Parmesan cheese over the top for additional flavor.

              Drizzle the remaining tablespoon of olive oil over the dish.

                Bake in the oven at 400°F (200°C) for 15-20 minutes, or until the cheese is bubbly and golden brown.

                  Once baked, remove from the oven and let it sit for about 5 minutes. Garnish with fresh basil leaves before serving.
