Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/2 cup unsalted butter, cold and cubed

1 cup shredded sharp cheddar cheese

1/4 cup grated Parmesan cheese

2 tablespoons fresh chives, chopped

2 tablespoons fresh parsley, chopped

1/4 cup buttermilk

1 large egg, beaten (for egg wash)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.

Cut in Butter: Add the cold, cubed butter into the flour mixture. Using a pastry cutter or your fingertips, blend until the mixture resembles coarse crumbs.

Incorporate Cheeses and Herbs: Stir in the shredded cheddar cheese, grated Parmesan cheese, chopped chives, and chopped parsley until evenly distributed.

Add Buttermilk: Pour in the buttermilk and gently mix until just combined. Be careful not to overwork the dough; it should be slightly sticky.

Shape the Biscuits: Turn the dough out onto a lightly floured surface. Pat it into a rectangle about 1-inch thick. Use a biscuit cutter or a sharp knife to cut the dough into rounds or squares, place them on the prepared baking sheet.

Apply Egg Wash: Brush the tops of the biscuits with the beaten egg for a beautiful golden finish.

Bake: Bake in the preheated oven for about 15-20 minutes, or until the biscuits are golden brown and a toothpick inserted into the center comes out clean.

Cool and Serve: Remove from the oven and let them cool slightly on a wire rack. Serve warm and enjoy the cheesy, herby goodness!
