1 medium head of cauliflower, grated or processed into rice-like texture

1 cup mixed vegetables (carrots, peas, and bell pepper), diced

2 large eggs, beaten

3 green onions, sliced

3 cloves garlic, minced

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro, for garnish (optional)

Instructions
 

Start by preparing the cauliflower; chop and pulse in a food processor until it resembles rice. Alternatively, you can grate it using a box grater.

    Heat the olive oil in a large skillet or wok over medium-high heat. Add the minced garlic and sauté for about 1 minute until fragrant.

      Next, add the mixed vegetables to the skillet, stirring them in for about 3-5 minutes until tender.

        Push the vegetables to one side of the skillet, then pour the beaten eggs into the empty space. Scramble the eggs until fully cooked, then mix them in with the vegetables.

          Add the cauliflower rice into the skillet, stirring everything together, and cook for another 5-7 minutes, or until the cauliflower is tender.

            Drizzle the soy sauce and sesame oil over the entire mixture and stir well to combine. Season with salt and pepper to taste.

              Finally, toss in the sliced green onions and mix one last time. Remove from heat.

                Serve the fried rice warm, garnished with fresh cilantro if desired.
