Ingredients
  

5 large carrots, peeled and chopped

1 medium onion, diced

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

4 cups vegetable broth

1 cup coconut milk

2 tablespoons olive oil

1 teaspoon ground cumin

1/2 teaspoon turmeric powder

Salt and pepper to taste

Fresh cilantro for garnish

Juice of 1 lime

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.

    Add the minced garlic and grated ginger, and cook for another minute until fragrant.

      Stir in the chopped carrots, ground cumin, and turmeric powder. Cook for an additional 5 minutes, stirring occasionally.

        Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 20 minutes, or until the carrots are tender.

          Remove the pot from heat and using an immersion blender, blend the soup until smooth. (Alternatively, carefully transfer to a blender in batches and blend.)

            Stir in the coconut milk and lime juice, and return to low heat to warm through. Season with salt and pepper to taste.

              Serve hot, garnished with fresh cilantro leaves.
