Ingredients
  

1 lb ground beef (80/20)

1 large onion, thinly sliced

2 tablespoons olive oil

1 tablespoon butter

Salt and pepper, to taste

4 slices Swiss cheese

4 slices rye or sourdough bread

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

Fresh parsley, chopped (for garnish, optional)

Instructions
 

Caramelize the Onions: In a large skillet, heat olive oil and butter over medium heat. Add the sliced onions, sprinkle with salt, and stir frequently for about 20-25 minutes until they are golden brown and caramelized.

    Season the Beef: While the onions are cooking, season the ground beef with salt and pepper in a bowl. Divide it into four equal portions and shape them into patties.

      Cook the Patties: In another skillet over medium-high heat, cook the prepared patties for about 4-5 minutes on each side, or until they reach your desired doneness. In the last minute of cooking, top each patty with a slice of Swiss cheese and cover the skillet to allow the cheese to melt.

        Prepare the Bread: Meanwhile, spread mayonnaise on one side of each slice of bread, and on the other side, spread Dijon mustard.

          Assemble the Patty Melts: Once the patties are ready, remove them from the skillet. On the unbuttered side of one slice of bread, place a patty with melted cheese, top with a generous amount of caramelized onions, and then cover with another slice of bread, buttered side up.

            Grill the Sandwich: In the same skillet, reduce the heat to medium, and grill the assembled sandwiches for 3-4 minutes on each side or until they are golden brown and crispy. Repeat with the remaining ingredients.

              Serve: Cut the sandwich in half and serve warm, garnished with chopped parsley if desired.
