Ingredients

1 cup granulated sugar (for caramel)

1/2 cup water (for caramel)

1 cup sweetened condensed milk

1/2 cup evaporated milk

3 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 cup baking powder

1/2 teaspoon salt

1/4 cup unsalted butter, melted

1/4 cup milk (for the batter)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.

Make the Caramel: In a small saucepan, combine the granulated sugar and water. Heat over medium heat, stirring gently until the sugar dissolves. Stop stirring and let it boil until the mixture turns a golden amber color (about 10 minutes). Quickly pour the caramel into each muffin cup, tilting to coat the bottoms.

Prepare the Flan Mixture: In a blender, combine sweetened condensed milk, evaporated milk, eggs, vanilla extract, and a pinch of salt. Blend until smooth and well combined.

Mix the Batter: In a large bowl, whisk together the flour, baking powder, and salt. Gradually add the melted butter and milk to the dry ingredients, stirring until just combined.

Assemble the Muffins: Pour the batter into each muffin cup, filling it about halfway. Then, pour the flan mixture on top, filling each cup nearly to the top.

Bake: Bake in the preheated oven for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Unmold: Allow the muffins to cool in the pan for about 10 minutes before inverting them onto a serving platter or individual plates. The caramel will drizzle down the sides.

Prep Time: 20 minutes | Total Time: 1 hour | Servings: 12 muffins

                  - Presentation Tips: Serve the caramel flan muffins warm or chilled, garnished with a dollop of whipped cream and a sprinkle of caramel sauce on top for extra elegance.
