1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons sugar

2 (8-ounce) packages cream cheese, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup sour cream

1 cup caramel sauce (store-bought or homemade)

Sea salt, for sprinkling

Chopped pecans or walnuts (optional, for topping)

Prepare the crust: Preheat your oven to 325°F (160°C). In a bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons sugar. Mix until well combined and resembles wet sand. Press the mixture into the bottom of a 9x9-inch baking pan lined with parchment paper. Bake for 10 minutes, then let it cool slightly.

    Make the cheesecake batter: In a large mixing bowl, beat the softened cream cheese and 1 cup of granulated sugar with an electric mixer until smooth and creamy.

      Add eggs and vanilla: Add in the eggs, one at a time, mixing well after each addition. Then, stir in the vanilla extract and sour cream until everything is combined and smooth.

        Layer the cheesecake: Pour half of the cheesecake batter over the prepared crust, spreading it evenly. Drizzle half of the caramel sauce over the batter. Use a knife to swirl the caramel slightly into the batter.

          Finish with more batter and caramel: Pour the remaining cheesecake batter over the caramel layer, smoothing it out. Drizzle the remaining caramel sauce on top and gently swirl with a knife to create a marbled effect.

            Bake the bars: Bake in the preheated oven for about 35-40 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for about 1 hour to prevent cracking.

              Chill and slice: Once cooled, refrigerate for at least 4 hours (overnight is best) until fully set. When ready to serve, lift the cheesecake out of the pan using the edges of the parchment paper and cut into bars.

                Garnish: Before serving, sprinkle sea salt on top and add chopped pecans or walnuts if desired.
