1 ciabatta roll or baguette

1 large ripe heirloom tomato, sliced

4 ounces fresh mozzarella cheese, sliced

A handful of fresh basil leaves

2 tablespoons balsamic glaze

1 tablespoon pesto sauce

Extra virgin olive oil, for drizzling

Salt and pepper to taste

Instructions
 

Start by preheating your oven to 350°F (175°C).

    Slice the ciabatta roll or baguette in half horizontally.

      Lay the bottom half of the bread on a baking sheet. Drizzle a little olive oil over it.

        Layer the fresh mozzarella slices evenly over the bottom half of the bread, then sprinkle with salt and pepper.

          Arrange the sliced heirloom tomatoes on top of the mozzarella, followed by a generous amount of fresh basil leaves.

            Drizzle the balsamic glaze and pesto sauce on top of the basil.

              Top it off with the other half of the bread.

                Bake in the preheated oven for about 10-12 minutes or until the cheese is slightly melted and the bread is golden.

                  Remove from the oven, slice the sandwich in half, and drizzle a little more olive oil and balsamic glaze before serving.
