2 large russet potatoes, diced

1 cup bell peppers (red, green, yellow), diced

1 small red onion, finely chopped

1 cup cooked breakfast sausage, crumbled (or vegetarian sausage)

4 large eggs

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Campfire: Start by building a campfire and letting it burn down until you have a nice bed of hot coals. If you're cooking on a grill, preheat it to medium heat.

    Cook the Potatoes: In a large cast-iron skillet, heat 2 tablespoons of olive oil over the fire. Once hot, add the diced potatoes and season with salt, pepper, and smoked paprika. Cook for about 10-15 minutes, stirring occasionally, until they become crispy and golden brown.

      Add Vegetables and Sausage: Stir in the chopped onion and bell peppers, cooking for another 5-7 minutes until they are softened. Add the crumbled sausage and garlic, stirring to combine. Cook for an additional 3-5 minutes, allowing the flavors to meld.

        Crack the Eggs: Make four small wells in the hash mixture and crack an egg into each well. Cover the skillet with a lid or a piece of foil to trap the heat. Cook for about 5-7 minutes, or until the eggs are set to your desired doneness (less time for runny yolks, more for firm).
