Cajun Seafood Pot Pie A Southern Comfort Classic

1 pound shrimp, peeled and deveined

1 cup crab meat, canned or fresh

1 cup andouille sausage, diced

1 cup carrots, diced

1 cup celery, diced

1 cup onion, chopped

3 cloves garlic, minced

1/2 cup frozen peas

1/4 cup flour

2 cups seafood or chicken broth

1 tablespoon Cajun seasoning

1 teaspoon thyme

1 teaspoon paprika

1 tablespoon Worcestershire sauce

2 teaspoons hot sauce (optional)

Salt and pepper, to taste

1 tablespoon olive oil

1 pie crust (store-bought or homemade)

1 egg, beaten (for egg wash)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large skillet, heat the olive oil over medium heat. Add the diced andouille sausage and cook until browned, about 5 minutes.

      Add the chopped onion, carrots, celery, and minced garlic to the skillet. Sauté until the vegetables are tender, about 7 minutes.

        Sprinkle the flour over the cooked vegetables and sausage, stirring to combine and cook for an additional 2 minutes.

          Gradually whisk in the seafood or chicken broth until the mixture is smooth and begins to thicken.

            Stir in the shrimp, crab meat, frozen peas, Cajun seasoning, thyme, paprika, Worcestershire sauce, and hot sauce. Season with salt and pepper. Cook for another 5 minutes until the seafood is cooked through. Remove from heat and let cool slightly.

              Pour the seafood filling into a baking dish (or individual ramekins if you prefer).

                Roll out your pie crust and place it over the filling, trimming excess dough and crimping the edges to seal. Cut a few slits in the top for steam to escape. Brush the top with the beaten egg.

                  Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown and flaky.

                    Allow to cool for a few minutes before serving.
