4 large russet potatoes, peeled and diced

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper (red or green), chopped

2 celery stalks, diced

4 cups chicken or vegetable broth

1 cup heavy cream

2 tablespoons Cajun seasoning

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

1 cup cooked and crumbled andouille sausage (optional for a meaty touch)

Fresh parsley, chopped for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion, bell pepper, and celery, sautéing for about 5 minutes until they are softened.

    Add the minced garlic to the pot and sauté for an additional 1 minute until fragrant.

      Stir in the Cajun seasoning and smoked paprika, coating the vegetables well with the spices.

        Add the diced potatoes to the pot, followed by the broth. Bring to a boil, then reduce to a simmer. Cover and cook for about 15-20 minutes, or until the potatoes are tender when pierced with a fork.

          If using, add the cooked andouille sausage to the pot and stir.

            Use an immersion blender to puree the soup until smooth, or transfer batches to a traditional blender if desired for a creamy texture (be careful with hot liquids).

              Return the blended soup to low heat and add the heavy cream. Stir well to incorporate and heat through, about 5 minutes.

                Taste and adjust seasoning with salt and pepper as needed.

                  Serve hot, garnished with a sprinkle of fresh parsley.
