2 tablespoons Cajun seasoning

1 tablespoon olive oil

2 tablespoons honey

2 cloves garlic, minced

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

Salt and black pepper to taste

Prepare the Marinade: In a small bowl, whisk together the Cajun seasoning, olive oil, honey, minced garlic, Dijon mustard, apple cider vinegar, salt, and black pepper until well combined.

    Marinate the Pork: Place the pork tenderloin in a large zip-top bag or shallow dish. Pour the marinade over the pork, ensuring it’s well coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes, or up to 2 hours for better flavor.

      Preheat the Oven: Preheat your oven to 400°F (200°C).

        Sear the Pork: Heat a large oven-safe skillet over medium-high heat. Remove the pork from the marinade, allowing excess to drip off. Sear the pork in the hot skillet for 3-4 minutes on each side until golden brown.

          Roast the Pork: Transfer the skillet to the preheated oven and roast for about 15-20 minutes, or until the internal temperature reaches 145°F (63°C).

            Rest the Pork: Once cooked, remove the skillet from the oven. Transfer the pork to a cutting board and let it rest for 5-10 minutes before slicing.
