2 salmon fillets (about 6 oz each)

1 cup large shrimp, peeled and deveined

1 tablespoon Cajun seasoning

2 tablespoons olive oil

1 tablespoon butter

2 cloves garlic, minced

1 cup heavy cream

1/2 cup chicken broth

1/2 cup cherry tomatoes, halved

1 cup spinach, fresh

1/4 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Season the Proteins: Begin by sprinkling Cajun seasoning generously over both sides of the salmon fillets and shrimp. Ensure all sides are well-coated for maximum flavor.

    Sear the Salmon: In a large skillet or frying pan, heat 1 tablespoon of olive oil over medium-high heat. When hot, add the salmon fillets, skin side down. Cook for 4-5 minutes on each side until golden brown and cooked through. Remove salmon from the skillet and keep warm.

      Cook the Shrimp: In the same skillet, add the remaining tablespoon of olive oil and 1 tablespoon of butter. Once melted, add the seasoned shrimp. Cook for 2-3 minutes or until shrimp turn pink and are cooked through. Remove from the skillet and set aside with the salmon.

        Create the Sauce: In the same skillet, add minced garlic and sauté for 30 seconds until fragrant. Pour in chicken broth and heavy cream, stirring to combine. Allow it to simmer for a few minutes, thickening slightly.
