Ingredients
  

1 pound boneless, skinless chicken thighs

1 tablespoon Cajun seasoning

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 cup orzo pasta

4 cups chicken broth

1 can (14.5 oz) diced tomatoes with green chilies

1 cup corn (fresh or frozen)

1 teaspoon smoked paprika

Salt and pepper to taste

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Season the Chicken: In a bowl, mix the bowing chicken thighs with Cajun seasoning, ensuring they are well-coated. Let it marinate for about 15 minutes to absorb the flavors.

    Cook the Chicken: In a large skillet or Dutch oven, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken thighs and cook for about 6-7 minutes on each side until browned and cooked through. Remove the chicken from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion and bell pepper, sautéing until the onion becomes translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute.

        Cook the Orzo: Stir in the orzo pasta and allow it to toast slightly for about 2 minutes. Pour in the chicken broth and the can of diced tomatoes, along with their juices. Add the smoked paprika, and season with salt and pepper to taste. Bring the mixture to a boil.

          Simmer: Once boiling, reduce the heat to low and cover. Let it simmer for about 10-12 minutes, or until the orzo is tender and most of the liquid is absorbed, stirring occasionally to prevent sticking.

            Combine: While the orzo is cooking, slice the cooked chicken into bite-sized pieces. After the orzo is cooked, gently stir in the corn and the sliced chicken until everything is well incorporated and heated through.
