Ingredients
  

4 cups all-purpose flour

1 packet (2 ¼ teaspoons) active dry yeast

1 ½ cups warm water (110°F)

2 tablespoons granulated sugar

1 teaspoon salt

1/4 cup unsalted butter, melted

1/2 cup baking soda

1 large egg, beaten

Coarse sea salt, for topping

Optional: melted butter for brushing after baking

Activate Yeast: In a large bowl, mix warm water and sugar. Sprinkle the yeast on top and let it sit for about 5 minutes until frothy.

    Make Dough: Add the melted butter and salt to the yeast mixture. Gradually stir in the flour until a dough begins to form. Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

      First Rise: Place the kneaded dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.

        Preheat Oven: Preheat your oven to 450°F (232°C) and line two baking sheets with parchment paper.

          Prepare Water Bath: In a large pot, bring 10 cups of water and the baking soda to a gentle boil.

            Shape Pretzel Bites: Punch down the risen dough and divide it into small pieces (about 1 inch in size). Roll each piece into a ball and set aside on a floured surface.

              Boil Pretzel Bites: Carefully place a few dough balls at a time into the boiling water for about 30 seconds. Remove with a slotted spoon and place on the prepared baking sheets.

                Brush and Sprinkle: Brush each pretzel bite with beaten egg and sprinkle coarse salt on top.

                  Bake: Bake in the preheated oven for 12-15 minutes or until golden brown.
