2 cups cooked brown rice

2 chicken breasts, diced

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

1/2 teaspoon garlic powder

Salt and pepper to taste

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, canned, or frozen)

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 avocado, sliced

1/2 cup shredded Monterey Jack cheese

1/4 cup fresh cilantro, chopped

Lime wedges for serving

Salsa for drizzling

Instructions
 

Prepare the Chicken: In a large skillet, heat the olive oil over medium heat. Season the diced chicken with chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Add the chicken to the skillet and cook until browned and cooked through, about 7-10 minutes. Remove from heat and set aside.

    Warm Up the Rice and Beans: In a small saucepan, combine the cooked brown rice, black beans, and corn. Heat over low for about 5 minutes until warmed through.

      Sauté the Vegetables: In the same skillet used for the chicken, add the diced red bell pepper and sauté for about 3-4 minutes until slightly softened.

        Assemble the Bowls: Start by placing a generous scoop of the rice and bean mixture at the bottom of each serving bowl. Top with the cooked chicken, sautéed peppers, cherry tomatoes, and slices of avocado.

          Add Toppings: Sprinkle shredded Monterey Jack cheese and chopped cilantro over the top of each bowl. Drizzle with salsa for a flavor boost.

            Garnish and Serve: Serve each bowl with lime wedges on the side for squeezing over the dish just before eating.
