1 French baguette, sliced diagonally

250g fresh burrata cheese

1 cup cherry tomatoes, halved

1/4 cup fresh basil leaves, torn

2 tablespoons balsamic glaze

2 tablespoons extra virgin olive oil

1 clove garlic, halved

Salt and pepper to taste

Preheat your oven to 400°F (200°C).

    Arrange the sliced baguette on a baking sheet. Brush each slice with olive oil and toast them in the oven for about 5-7 minutes, or until they are golden brown and slightly crisp.

      While the bread is toasting, prepare the tomato topping by mixing the halved cherry tomatoes and torn basil leaves in a bowl. Drizzle with a little olive oil and season with salt and pepper to taste. Toss gently to combine.

        Once the bread is toasted, take it out of the oven and immediately rub the cut side of the garlic clove over the warm bread slices for added flavor.

          Carefully place a generous spoonful of the tomato and basil mixture on each slice of toasted bread.

            Tear the burrata into pieces and place it on top of the tomato mixture, allowing it to ooze slightly over the edges.

              Drizzle the balsamic glaze over the bruschetta for a sweet and tangy finish.

                Garnish with any remaining fresh basil leaves and a sprinkle of salt.

                  Serve immediately while the bread is warm and the burrata is creamy.
