500g cream cheese, softened

200g sugar

4 large eggs

200ml heavy cream

1 teaspoon vanilla extract

1 tablespoon all-purpose flour

Preheat your oven to 210°C (410°F) and line a round 9-inch (23cm) springform pan with parchment paper, ensuring the paper rises above the edges of the pan for easy removal later.

    In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy, using an electric mixer on medium speed.

      Add in the eggs one at a time, mixing well after each addition. Be careful not to overmix; the mixture should be well combined but still fluffy.

        Slowly pour in the heavy cream and mix until fully incorporated, then add the vanilla extract, flour, and a pinch of salt. Mix until smooth and slightly glossy.

          Pour the cheesecake batter into the prepared springform pan, smoothing the top with a spatula.

            Bake in the preheated oven for about 40-45 minutes, or until the top is a deep golden brown and slightly burnt, but the center should remain soft and jiggle slightly when shaken.

              Once baked, remove the cheesecake from the oven and let it cool in the pan for about 30 minutes.

                Turn off the oven and crack the oven door open slightly, allowing the cheesecake to cool gradually in the oven for another hour.

                  Cover and refrigerate the cheesecake for at least 4 hours, preferably overnight, to set fully.

                    When ready to serve, carefully remove the cheesecake from the pan, peel off the parchment paper, and place it on a serving dish.
