Ingredients
  

2 cups cooked chicken, shredded

1 medium onion, chopped

2 cloves garlic, minced

3 cups chicken broth

2 cups cauliflower florets

1 cup carrots, diced

1 cup celery, diced

1 cup heavy cream

1/2 cup buffalo sauce (adjust to taste)

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

1/4 cup green onions, sliced (for garnish)

1/2 cup blue cheese crumbles (optional, for garnish)

Instructions
 

In a large pot over medium heat, add a splash of olive oil and sauté the chopped onion until translucent, about 5 minutes.

    Add minced garlic and cook for an additional 1-2 minutes until fragrant.

      Pour in the chicken broth and bring to a simmer.

        Add the cauliflower, carrots, and celery to the pot and simmer for 10-12 minutes until the vegetables are tender.

          Stir in the shredded chicken, buffalo sauce, thyme, and paprika. Mix well and let cook for another 5 minutes.

            Reduce the heat and pour in the heavy cream, stirring gently. Season with salt and pepper to taste. Let the soup simmer for an additional 3-5 minutes, allowing the flavors to meld together.

              Serve the soup hot, garnished with sliced green onions and blue cheese crumbles if desired.
