Ingredients
  

2 cups cooked chicken, shredded (preferably rotisserie or grilled)

1/2 cup buffalo sauce (adjust to taste)

4 cups mixed greens (spinach, arugula, lettuce)

1 cup celery, diced

1/2 cup red onion, thinly sliced

1/2 cup cherry tomatoes, halved

1/4 cup blue cheese crumbles (optional)

1 avocado, diced

1/4 cup ranch dressing or Greek yogurt

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Instructions
 

In a mixing bowl, combine the shredded chicken and buffalo sauce, mixing well until the chicken is fully coated. Adjust the amount of buffalo sauce based on your spice preference.

    In a large salad bowl, toss together the mixed greens, diced celery, red onion, and cherry tomatoes.

      Add the buffalo chicken to the salad mixture, gently folding the chicken in to avoid bruising the greens.

        Top the salad with diced avocado, blue cheese crumbles (if using), and drizzle with ranch dressing or Greek yogurt.

          Season with salt and pepper to taste, and gently toss the salad to combine all the ingredients.

            Serve immediately, garnished with fresh cilantro or parsley if desired.
