4 medium zucchinis

2 cups cooked chicken, shredded

1/2 cup buffalo sauce (adjust to taste)

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

1/4 cup green onions, finely chopped

Salt and pepper to taste

Fresh parsley for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    Slice the zucchinis in half lengthwise and scoop out the flesh with a spoon to create a hollow boat. Reserve the flesh for later use.

      In a large bowl, combine the shredded chicken, buffalo sauce, cream cheese, half of the cheddar cheese, and reserved zucchini flesh. Mix well until all ingredients are coated and well combined. Season with salt and pepper to taste.

        Place the zucchini halves on a baking sheet lined with parchment paper. Carefully spoon the buffalo chicken mixture evenly into each zucchini boat, packing it in slightly.

          Sprinkle the remaining cheddar cheese on top of each filled zucchini.

            Bake in the preheated oven for 25-30 minutes, or until the zucchinis are tender and the cheese is bubbly and melted.

              Remove from the oven and garnish with chopped green onions and fresh parsley before serving.
