8 oz penne pasta

2 cups cooked chicken, shredded (can use rotisserie for convenience)

1 cup Buffalo sauce (adjust to taste)

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup blue cheese crumbles (optional)

1/2 cup chicken broth

1/4 cup green onions, chopped

Salt and pepper to taste

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Fresh parsley for garnish

Instructions
 

Cook the penne pasta according to package instructions until al dente. Drain and set aside.

    In a large skillet, heat the olive oil over medium heat. Add the shredded chicken and garlic powder and onion powder, and sauté for about 2-3 minutes until heated through.

      Pour in the Buffalo sauce and chicken broth, stirring to combine. Allow the mixture to simmer for about 3-4 minutes until heated through.

        Reduce the heat to low and add the softened cream cheese; stir until completely melted and the mixture is smooth.

          Mix in the cooked penne pasta and cheddar cheese, stirring until well combined and creamy. Season with salt and pepper to taste.

            If using, gently fold in blue cheese crumbles until melted into the pasta.

              Remove from heat and garnish with chopped green onions and fresh parsley before serving.
