8 oz elbow macaroni

2 cups cooked chicken, shredded

1 cup Buffalo sauce (adjust to taste)

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

½ cup cream cheese, softened

2 cups milk

1/4 cup unsalted butter

1/4 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/4 cup chopped green onions (for garnish)

Optional: blue cheese crumbles for topping

Instructions
 

Cook the Macaroni: In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Prepare the Cheese Sauce: In a saucepan over medium heat, melt the butter. Once melted, whisk in the flour to create a roux. Cook for about 2 minutes, stirring continuously.

      Add Cream & Spices: Gradually pour in the milk, whisking constantly to prevent lumps. Continue cooking until the mixture thickens (about 5-7 minutes). Stir in the cream cheese until smooth.

        Incorporate Cheeses: Reduce the heat to low and add the cheddar and mozzarella cheeses, garlic powder, onion powder, smoked paprika, and black pepper. Stir until the cheeses are fully melted and the sauce is creamy.

          Combine with Chicken and Buffalo Sauce: In a large mixing bowl, combine the cooked macaroni, shredded chicken, and Buffalo sauce. Pour the cheese sauce over the mixture and stir until everything is evenly coated.

            Bake (Optional): For an extra crispy top, transfer the mixture to a greased baking dish, top with additional cheddar cheese and blue cheese crumbles if desired, and bake at 350°F (175°C) for 20-25 minutes, until bubbling and golden on top.
