4 large sweet bell peppers (any color)

2 cups shredded cooked chicken

8 oz cream cheese, softened

1 cup buffalo wing sauce (adjust to taste)

1 cup shredded cheddar cheese

1/2 cup crumbled blue cheese (optional)

1/4 cup Greek yogurt or sour cream

2 green onions, chopped

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Prepare the Peppers: Preheat your oven to 350°F (175°C). Cut the tops off the sweet bell peppers and remove the seeds and membranes. Lightly drizzle or spray a baking dish with olive oil.

    Mix the Filling: In a large mixing bowl, combine the shredded cooked chicken, softened cream cheese, buffalo wing sauce, shredded cheddar cheese, Greek yogurt or sour cream, and half of the chopped green onions. Stir until the mixture is well combined. Season with salt and pepper to taste.

      Stuff the Peppers: Carefully spoon the buffalo chicken mixture into each bell pepper, filling them generously. Place the stuffed peppers upright in the prepared baking dish.

        Bake: Cover the dish with foil and bake in the preheated oven for 25-30 minutes. Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the filling is bubbly.

          Optional Topping: If desired, sprinkle additional cheddar cheese or blue cheese on top of the stuffed peppers during the last 10 minutes of baking for an extra cheesy finish.

            Garnish and Serve: Once done, remove from the oven and let cool slightly. Top with the remaining chopped green onions and fresh parsley if using. Serve warm, with tortilla chips or fresh veggie sticks on the side.
