1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1/2 teaspoon baking powder

1/4 teaspoon sea salt

1/2 cup unsalted butter, melted

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/2 cup creamy peanut butter

1 cup powdered sugar

1 cup semi-sweet chocolate chips

1 tablespoon vegetable oil

Instructions
 

Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners or grease each cup lightly.

    In a mixing bowl, whisk together the flour, cocoa powder, baking powder, and sea salt until well combined. Set aside.

      In another large bowl, combine the melted butter and granulated sugar, then mix until smooth. Beat in the eggs one at a time followed by the vanilla extract.

        Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix; the batter should be thick and fudgy.

          Spoon the brownie batter into the prepared mini muffin tin, filling each cup about two-thirds full.

            Bake for 10-12 minutes, or until a toothpick inserted into the center comes out mostly clean (a few moist crumbs are okay).

              While the brownies are baking, prepare the peanut butter filling. In a bowl, mix the creamy peanut butter with powdered sugar until smooth and creamy.

                Once the brownies are out of the oven, let them cool in the pan for about 5 minutes. Then, using the back of a small disposable spoon or your fingers, create a small well in the center of each brownie bite.

                  Fill each well with about a teaspoon of the peanut butter mixture. Allow the brownie bites to cool completely in the pan.

                    After the brownie bites have cooled, melt the semi-sweet chocolate chips with the vegetable oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.

                      Drizzle or dip each brownie bite into the melted chocolate, coating the peanut butter filling completely.

                        Place the finished brownie bites on a baking sheet lined with parchment paper and let the chocolate set in the refrigerator for about 20-30 minutes.
