2 cups Brussels sprouts, halved

1 medium sweet potato, diced

1/2 red bell pepper, chopped

1 small onion, diced

2 cloves garlic, minced

3 large eggs

2 tablespoons olive oil

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Begin by heating 1 tablespoon of olive oil in a large skillet over medium heat.

    Add the diced sweet potato to the skillet. Sauté for about 5-7 minutes until the edges start to soften.

      Stir in the halved Brussels sprouts, chopped red bell pepper, onion, and garlic. Season with smoked paprika, salt, and pepper.

        Continue to cook everything together for an additional 10-12 minutes, stirring occasionally, until the vegetables are tender and slightly caramelized.

          Create three small wells in the veggie mixture and crack an egg into each well. Reduce heat to low, cover the skillet, and cook until the eggs are set to your liking (about 5-7 minutes for runny yolks).

            Once cooked, remove from heat and sprinkle fresh parsley over the top for a pop of color and freshness.
