Ingredients

1 baguette, sliced into 1/2-inch rounds

2 cups cherry tomatoes, halved

4 cloves garlic, minced

1/4 cup fresh basil leaves, chopped

2 tablespoons extra virgin olive oil

1 tablespoon balsamic glaze

Salt and pepper to taste

Fresh mozzarella pearls (optional, for garnish)

Instructions

Preheat your oven to 400°F (200°C).

Arrange the baguette slices on a baking sheet; brush one side lightly with olive oil.

Bake the bread for about 5-7 minutes or until golden brown and toasted.

In a large bowl, combine the halved cherry tomatoes, minced garlic, chopped basil, 2 tablespoons of olive oil, salt, and pepper. Toss until the tomatoes are evenly coated.

Remove the toasted bread from the oven. On each slice, generously spoon the cherry tomato mixture on the oiled side.

Drizzle a small amount of balsamic glaze over the topped bruschetta for added flavor.

If desired, add a few fresh mozzarella pearls on top of each bruschetta for a creamy finish.

Serve immediately while the bread is still warm and enjoy!
