4 boneless, skinless chicken cutlets

1 cup cherry tomatoes, diced

1/4 cup red onion, finely chopped

2 cloves garlic, minced

1/4 cup fresh basil, chopped

1/4 cup balsamic vinegar

1 tablespoon olive oil

Salt and pepper, to taste

1 cup shredded mozzarella cheese

1/4 teaspoon crushed red pepper flakes (optional)

Fresh basil leaves for garnish

Instructions
 

Prepare the Bruschetta Topping: In a mixing bowl, combine the diced cherry tomatoes, red onion, minced garlic, chopped basil, balsamic vinegar, olive oil, salt, pepper, and crushed red pepper flakes. Mix well and set aside to allow the flavors to meld.

    Cook the Chicken: Heat a large skillet over medium-high heat and add a drizzle of olive oil. Season the chicken cutlets with salt and pepper on both sides. Once the skillet is hot, add the chicken cutlets and cook for about 3-4 minutes on each side, or until they are cooked through and golden brown. Remove from the skillet and place on a serving plate.
