1 large head of broccoli, chopped into florets

2 medium-sized potatoes, peeled and diced

1 medium onion, finely chopped

3 cloves of garlic, minced

4 cups vegetable broth

1 cup milk (or dairy-free alternative)

1 cup shredded cheddar cheese (plus extra for topping)

2 tablespoons olive oil

1 teaspoon dried thyme

Salt and pepper to taste

Optional: ¼ cup sour cream for garnish

Optional: Fresh parsley, chopped for garnish

Sauté the Aromatics: In a large pot, heat olive oil over medium heat. Add the finely chopped onion and minced garlic. Sauté for about 5 minutes, or until the onion becomes translucent.

    Add Vegetables: Stir in the diced potatoes and chopped broccoli. Cook for an additional 5 minutes, allowing the vegetables to soften slightly.

      Pour in the Broth: Add the vegetable broth and thyme to the pot. Bring to a boil, then reduce to a simmer. Cover and let it cook for about 15-20 minutes, until the potatoes and broccoli are fork-tender.

        Blend the Soup: Using an immersion blender, blend the soup until smooth and creamy. Alternatively, you can blend it in batches using a regular blender. If you prefer a chunky texture, blend just half of the soup and leave the rest for a nice contrast.

          Add Milk and Cheese: Stir in the milk and shredded cheddar cheese. Return to medium heat, stirring until the cheese is fully melted and the mixture is heated through. Season with salt and pepper to taste.

            Serve: Ladle the soup into bowls, and if desired, top with extra shredded cheese, a dollop of sour cream, and fresh parsley.
