Ingredients

2 cups cooked egg noodles

1 pound boneless, skinless chicken breasts, cubed

2 cups fresh broccoli florets (or frozen, thawed)

1 cup sharp cheddar cheese, shredded

1 can (10.5 oz) cream of chicken soup

1 cup chicken broth

1 cup milk

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon salt

1 teaspoon Dijon mustard

1/2 cup breadcrumbs

2 tablespoons olive oil

Optional: 1/4 cup green onions, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Cook the Noodles: Boil the egg noodles according to the package instructions until al dente. Drain and set aside.

Cook the Chicken: In a large skillet over medium heat, add olive oil and cook the cubed chicken for about 6-8 minutes, until it’s cooked through and no longer pink. Season with garlic powder, onion powder, salt, and pepper.

Mix the Base: In a large mixing bowl, combine the cooked chicken, cooked noodles, broccoli florets, cream of chicken soup, chicken broth, milk, shredded cheddar cheese, and Dijon mustard. Stir until everything is well combined.

Transfer to Casserole Dish: Pour the mixture into a greased 9x13 inch casserole dish.

Prepare Topping: In a small bowl, mix breadcrumbs with a tablespoon of melted butter. Sprinkle the breadcrumb mixture evenly over the casserole.

Bake: Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the casserole is bubbly.

Garnish and Serve: Remove from the oven, let it cool for a few minutes, then sprinkle chopped green onions on top for garnish. Serve warm.
