Brisket Baked Potato

4 large russet potatoes

2 cups cooked brisket, shredded or chopped

1 cup sour cream

1 cup shredded sharp cheddar cheese

1/2 cup green onions, chopped

1/4 cup barbecue sauce (your favorite brand)

2 tablespoons butter

Salt and pepper to taste

Preheat your oven to 400°F (200°C).

    Scrub the russet potatoes under running water to remove any dirt. Pat them dry with a towel.

      Prick each potato several times with a fork to allow steam to escape during baking.

        Rub the potatoes with butter and sprinkle them with salt.

          Place the potatoes directly on the oven rack or on a baking sheet, and bake for 45-60 minutes, or until they are tender when pierced with a fork.

            While the potatoes are baking, prepare the brisket topping. In a bowl, mix the shredded brisket with barbecue sauce until well combined.

              Once the potatoes are done, carefully remove them from the oven and let them cool slightly.

                Slice each potato lengthwise, creating a pocket. Gently fluff the insides with a fork, adding a pinch of salt and pepper to taste.

                  Generously fill each potato with the barbecue brisket mixture.

                    Top with sour cream, shredded cheddar cheese, and chopped green onions.

                      Optional: Return the stuffed potatoes to the oven for an additional 5-10 minutes to melt the cheese slightly.
