Ingredients
  

2 tablespoons olive oil

1 small onion, chopped

2 cloves garlic, minced

4 cups fresh spinach, washed and roughly chopped

4 large eggs

1/4 teaspoon red pepper flakes (optional)

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup feta cheese, crumbled

1/4 cup cherry tomatoes, halved

Fresh herbs (such as parsley or dill) for garnish

Instructions
 

Heat the olive oil in a large skillet over medium heat.

    Add the chopped onion and sauté for 3–4 minutes, or until translucent.

      Stir in the minced garlic and red pepper flakes (if using), cooking for an additional 1 minute until fragrant.

        Add the chopped spinach to the skillet, cooking until wilted (about 2 minutes).

          Create four small wells in the spinach mixture and crack an egg into each well.

            Season the eggs with salt and black pepper and sprinkle the cherry tomatoes around the skillet.

              Cover the skillet with a lid and cook for about 5–7 minutes, or until the eggs are set to your liking.

                Once done, remove from heat and sprinkle the feta cheese over the top.

                  Garnish with fresh herbs before serving.
